Find Ranchers Near You →Ohio half-cow pricesWhy the Processor Matters When You Buy Beef
When you buy a quarter, half or whole beef from a farm, the farm usually books a processor. People also call it the butcher or the locker. The processor harvests the animal, hangs it to age, and cuts and wraps it the way you ask on your cut sheet.
You may never meet them. But the processor’s inspection type decides how the farm is allowed to sell you that beef. It explains why one farm sells steaks by the pound and another only sells a share of the animal.
The 3 Inspection Types, in Plain English
USDA-inspected
A federal inspector is on site for every harvest. Packages carry the round USDA mark.
Can be sold: by the cut, anywhere in the U.S., including online.
Ohio-inspected
An Ohio Department of Agriculture inspector does the same job, every day the plant harvests or processes.
Can be sold: by the cut, but only inside Ohio. Plants marked CIS are in a program that lets them use the USDA mark and ship out of state.
Custom-exempt
The plant cuts and wraps an animal for its owner. Every package is stamped “Not For Sale.” Inspectors visit, but not every day.
Can be sold: it can’t. This is why many farms sell you a share of the live animal, and the plant cuts it for your household.
Many inspected plants also do custom work, so one butcher can do both. More on the three types: USDA, state or custom-exempt, explained.
Official lists, not our verification. These plants come straight from the USDA and Ohio inspection lists. We haven’t visited or called them, and being listed isn’t a recommendation. Phone numbers come from the USDA list, and websites appear only where we’ve checked them ourselves. Many plants book months ahead, so call first.

Ohio Beef Processors: Quick Answers
Can I buy beef straight from a processor?
Sometimes. Many Ohio-inspected and USDA plants have a meat counter or sell freezer beef. A custom-exempt plant can only cut and wrap an animal for its owner, so it can’t sell you meat.
Is USDA-inspected beef safer than custom-exempt beef?
Not by itself. All three types are licensed and inspected. USDA and Ohio plants have an inspector on site for every harvest, and custom plants get unannounced visits. The biggest difference is how the beef can be sold.
Will I need to call the processor myself?
Sometimes. If you buy a quarter or half from a farm, you’ll often call the processor with your cut sheet and pay them for processing. If you buy boxes or cuts, the farm handles it.
Does every plant here take cattle?
Not always. The USDA plants listed harvest cattle. Ohio’s list only says “red meat,” which can mean beef, pork, lamb or goat, so call before you book.
