3 Questions to Ask a Rancher Before You Buy Beef

Buying beef straight from a rancher is a great way to know what you’re eating. Three quick questions tell you most of it, and a good rancher will be glad to answer.

How Should I Start?

Start small. Many ranches sell sampler bundles or ground beef packs. Buy a little first and see how the order goes. Ordering from a farm that ships? See buying beef online.

Question 1

“Were These Cattle Born, Raised and Finished on Your Land?”

Some ranches raise every animal from birth. Others buy young cattle and finish them. Both can be fine. You want a clear answer.

GOOD SIGN
  • “Born and raised right here.”
  • “We buy calves from a neighbor and finish them on our pasture.”
RED FLAG
  • “We source from all over,” with no names
  • A story that changes when you ask a follow-up

Question 2

“Who Processes Your Beef, and Is It USDA or State-Inspected?”

The answer tells you how you can buy:

  • USDA-inspected plant: the rancher can sell you individual cuts and packs.
  • State-inspected plant: same idea, but usually only within that state.
  • Custom-exempt processor: the beef is only for the animal’s owner and is marked “Not for Sale.” That’s why ranchers sell quarter and half shares before processing. You’re buying part of the animal, so the beef is yours.
GOOD SIGN
  • They name the processor
  • They know what type of plant it is
RED FLAG
  • Single packages marked “Not for Sale” offered by the pound
  • No idea who does the processing

Question 3

“Is Your Ground Beef From One Animal or Blended?”

Grocery store ground beef is usually blended from many cattle. A small ranch’s ground beef typically comes from its own cattle, sometimes from a single animal.

GOOD SIGN
  • “It’s all our own cattle.”
  • “Each batch comes from one animal.”
RED FLAG
  • They don’t know
  • They’re reselling ground beef from somewhere else without saying so

When Should I Buy a Freezer Share?

Found a rancher you like? A quarter or half share usually lowers your cost per pound. Ask whether the price is by hanging weight or take-home weight. Check how much freezer space a quarter cow needs. In Ohio? See what half a cow costs in Ohio.
