Is a Half Cow Cheaper Than the Grocery Store?
Per pound, a half cow can beat store steak prices by a wide margin. Store ground beef is still cheaper.
- Typical quote: $5.76/lb hanging, plus about $0.94/lb processing
- Real cost: about $11–$12.40/lb packaged
- That one price covers ribeye, strip, roasts and ground
- Grass-fed ribeye bought by the cut: about $28.89/lb
- Up front: about $2,400–$2,500, plus freezer space
- Ground beef (100% beef): $6.79/lb
- Round roast (Choice, boneless): $8.80/lb
- Beef for stew: $8.53/lb
- Sirloin steak (Choice, boneless): $14.11/lb

Bottom line: A half cow wins on price when you pay about $9.40/lb or less packaged, or eat plenty of steaks. If you mostly buy ground beef, the store is hard to beat. Many buyers also care about knowing exactly which ranch raised their beef.

What Do the Extra Dollars Buy?
Price per pound is only half the story. Think fast-food burger vs. steakhouse burger: both are beef, but you’re not paying for the same thing.
- You know the breed, the feed and how it was finished
- Often hung and aged about 2 weeks before cutting (ask yours)
- Ground beef from that ranch’s own cattle; ask if it’s one animal
- Cut to your order by a local processor you can name
- A real person to call with questions
- Breed and feed rarely on the label
- Aging, if any, usually isn’t listed
- Ground beef usually blended from many cattle
- Cut to a standard spec at a large plant
- Consistent, easy to find, often cheaper
Worth paying more? Sometimes. If taste and knowing your beef matter to you, the extra can be worth it. If you mostly need budget ground beef, the store often wins.
