01 / Step 1
What Should I Do Before I Call a Rancher?
- Pick a size. Quarter, half or whole. See quarter vs. half vs. whole.
- Check your freezer. A half needs about 9 cubic feet of chest freezer. Freezer guide.
- Set a budget. In Ohio, a half usually runs $1,800–$3,000 all in. Ohio prices.
- Shortlist 2–3 ranches near you. Ohio ranchers.
02 / Step 2
What Should I Ask About Price?
- “Is your price per pound hanging weight or take-home weight?”
- “Is processing included? Is there a kill fee?”
- “About how many pounds will I take home?”
- “How much is the deposit, and can I get it back?”
Then plug the answers into our half-cow calculator to see your real price per pound. Why hanging weight matters.
03 / Step 3
What Should I Ask About the Beef?
- “Were the cattle born, raised and finished here?”
- “Grass-finished or grain-finished?”
- “Who does your processing?”
- “Is the ground beef from your own cattle?”
More on these in 3 questions to ask a rancher.
04 / Step 4
What Should I Know Before the Butcher Calls?
- Ask how long the wait is. Many farms book months ahead, so plan early. How long it takes.
- Ask when your cut sheet is due.
- Decide steak thickness, roast size and ground beef pack size. Cut sheet guide.
05 / Step 5
What Happens on Pickup Day?
- Clear the freezer the week before.
- Bring coolers or sturdy boxes.
- Get the final hanging weight and bill in writing.
- Make sure the beef is frozen solid.
06 / Side by side
What Are Good Signs and Red Flags?
- Clear answer on hanging vs. take-home weight
- Names their processor
- Written price and deposit terms
- Tells you the wait time up front
- “Don’t worry about it”
- Can’t say who processes
- Price changes when you ask again
- Wants full payment up front, nothing in writing

Is Buying Direct Always Cheaper?
