What Are the 2 Ways to Buy From a Ranch?
Buy a share of one animal (a quarter, half or whole), or a smaller box of mixed cuts. Here’s how they compare.
| Option | Hanging weight | Beef you take home | Freezer space | Best for |
|---|---|---|---|---|
| Quarter | About 125–200 lb | About 75–130 lb | About 4.5 cu ft chest (5.5 upright) | Couples, small families or a first try with a new ranch |
| Half | About 250–400 lb | About 150–260 lb | About 9 cu ft chest (11 upright) | Families who cook beef most weeks |
| Whole | About 500–800 lb | About 300–520 lb | About 18 cu ft chest (22 upright) | Big households, or splitting with friends and family |
| Bundle or meat box | Not sold this way | About 10–25 lb | Under 1 cu ft: fits a kitchen freezer | Sampling a ranch, small freezers or picking exact cuts |
Take-home beef is about 60–65% of hanging weight. Freezer sizes are minimums, so leave a little extra room. Not sure which size? How much beef to buy
Same beef, different trade-offs. A share usually costs less per pound and lets you choose your cuts, but many ranches book processing months ahead, so reserve early. Boxes cost more per pound, but they often ship or are ready for pickup sooner because the beef is already cut and frozen.
How Does a Bulk Order Work?
- Put down a deposit. It holds your share until processing day. Deposits are often non-refundable, so ask before you pay.
- Know what the price covers. Most ranches price by hanging weight, and the butcher’s processing fee is often billed separately. Ask what’s included. Hanging vs. take-home weight
- Fill out a cut sheet. You decide how thick to cut the steaks, how big to make the roasts and how much goes to ground beef. Cut sheet guide
- Pick up your beef. Expect less than the hanging weight: about 60–65% of it, after bone, fat trim and moisture loss during aging. Bring coolers.
Plan ahead: processing dates can be months out, and pickup is usually 2–3 weeks after harvest. How long it takes
