Quarter Cow vs. Half Cow vs. Whole Cow: How Much Beef Should You Buy?

Most couples do best with a quarter, most families of 4 with a half. A whole only makes sense for a big household or a split. Here’s how to size it in 30 seconds.

The short answer

How Much Beef Should You Buy?

Buy what you’ll eat in about a year, and what fits in your freezer. Most U.S. households eat about 1 lb of beef per person a week, so start there.

Upright freezers need about 20% more space. Take-home beef is about 60–65% of hanging weight.

Your numbers

How Long Will My Beef Last?

Take-home pounds ÷ pounds you eat a week = weeks it lasts

Example: a half with about 186 lb of take-home beef, eaten at 4 lb a week, lasts about 46 weeks. That’s a good fit. At 2 lb a week it lasts almost 2 years, so a quarter is smarter.

Vacuum-sealed beef keeps 12 months or more in a chest freezer, but it tastes best inside a year.

Between sizes?

Go Smaller or Go Bigger?

Go smaller if…

  • You don’t own a chest freezer yet.
  • It’s your first order from this ranch.
  • You mostly cook ground beef.
  • A big upfront bill would pinch.

Go bigger if…

  • You grill steaks most weeks.
  • You have freezer room to spare.
  • You’re fine booking months ahead.
  • You can split it with family or friends.

Still unsure? Pick the smaller share. Running out early is easier to fix than freezer-burned roasts.

Timing

How Long Is the Wait?

  • Quarters, halves and wholes are tied to processing dates, which can be months out. Book early.
  • Pickup is usually 2–3 weeks after harvest, while the beef hangs and gets cut.
  • Can’t wait? A bundle box often ships or is ready in days.
